Most people know that cute little diner on 16th Street called Rachel’s on 16th, but not many know the story of how it all started.
It all started in 2019 when Rachel Alvarado saw an opportunity for a new business.
“Opening my own business was never the plan but when we saw the opportunity, we took the chance and I’m glad I did,” said Alvarado.
Rachel’s on 16th opened in August of 2019. Opening a new business is hard, but Alvarado took on the challenge. She overcame the struggle of starting up her own business while also undergoing chemotherapy treatments.
Less than a year after opening Rachel’s on 16th had to shut down due to the pandemic.
“It was a huge struggle trying to stay open while being takeout only and still when we were able to open back up at only 50% capacity,” said Alvarado.
Rachel’s on 16th briefly moved to what was formerly known as Carlitos Soul Kitchen to try out more of a dinner menu. After some struggles ultimately, the best decision for the business was to move back to 16th Street.
“I thought having a bigger space with a dinner menu would work but everyone loves us as a diner on 16th Street,” said Alvarado.
Some advice from Alvarado for anyone wanting to follow in her footsteps,
“I would say take the jump but also understand you have to be ‘married’ to your business in order to succeed.”
